It was one of those lucky mornings where I just had a bit of sunbutter left so I made oats in a jar.
Breakfast was easy because the almost empty nut butter jar was calling my name, but dinner was a different story. I got home at a reasonable time and stood in my kitchen staring at my ripe mango and lemon cucumber – what to do, what to do.
Well, after hunting through the fridge and pantry I threw together the following, colorful dish:
Quinoa, tomatoes, avocado, lemon cucumber, mango, lettuce, basil, ginger dressing, chives
I think it tasted better because I put the salad in a bright matching bowl
