Time for some fun food!

Healthy guacamole, woman peas! Yup, I made it with peas!IMG_1604I used 3 very ripe avocados and half a bag of frozen peas (that I defrosted first). I hand blended the avocados and peas together, but I like my guac chunky so I didn’t blend it until it was smooth. Then I added in chopped red pepper, onion and cilantro. I mixed in some garlic powder and lime and then it was munchin’ time.

Waking up with the spring sun has inspired many a morning full of smoothies including, a refreshing strawberry banana smoothie.IMG_1609One banana blended with a handful of frozen strawberries, plus some almond milk and chia seeds. That simple. Blend together and finish with a straw – the only way to drink a smoothie in the morning :)

Chicken dinner – easy but delicious and satisfying after a long day at work followed by a workout. I tossed some chicken breasts in the oven with Trader Joe’s Soyaki sauce and sautéed some broccoli and brussel sprouts with garlic and oregano. I added all of those components to a large bowl with rice and topped it all off with some dipping ketchup. Quite a filling meal.  IMG_1618And that’s it for what I ate Wednesday!

Time to break out the summer food

Well it’s not exactly time for barbecues,  but it’s never too early to break out the breakfast smoothie. As the smell in the air grows crisper and the ground thaws with the touch of the sun, I think it’s appropriate to make a fruity and refreshing morning meal.

Yesterday I broke out the frozen fruit and even went out on a limb and added my first chia seeds to my smoothie.

Blend: almond milk, frozen mangos, frozen blueberries, one banana, spinach and Chia seeds.

The end result is sadly a dingy hue of bleh, but it’s mighty tasty and quite filling!

Ouf of the Club

…and I’m happy this day has come.

Today I said goodbye to my handicap parking pass.

It came in handy while I was on crutches, and it was even more useful when I started to walk on my own again and needed to be close to my destination. Today the pass expired and a smile was on my facing knowing that I no longer need to be part of the club that has to park closer to make life easier. I can walk on my own just like before, with no limp, with no hesitations and almost with a hop in my step.

So, so long handicap parking pass, I might look longingly at those painted blue handicap spaces, but I will be happy to pass them by for someone in need to use.

This momentous day called for a grand breakfast of eggs, so I mixed in some dijon mustard and enjoyed a luxurious dish of protein and spice.

Now I just have to remember that I can’t park in specially marked parking spaces anymore or I might be joining another club, the “I owe a large fine for not following the rules” club.

Routine

Back when I could run I would mix up my weekday mornings with a long jog before work. Now that my exercise is limited and fits into my schedule as an evening activity, my morning routine has changed.

I still wake up early, no thanks to miss big eyes,

but instead of stepping out the door to run by the water, I grab a seat on the couch and watch the morning news.

I check email, get my daily dose of what’s happening in the world and slowly get dressed.

I also have time to make nice meals instead of dining and dashing.

While I do miss those early morning runs, I appreciate my morning routine of getting prepared for the day. And soon enough I will be able to run again and won’t have any excuse not to see that sunrise.

Friday Fings

It was a beautiful day Friday so I decided to throw on a dress and boots and embrace the warm fall weather.

It was still quite chilly in the morning so to warm up I mashed up a banana, mixed in some instant oats and sprinkled it with PB2.

It was a busy, long day and somehow I made it to the gym to bike for 45 minutes while listening to my favorite podcast – The Moth (anyone else out there a fan?).

Once I arrived home it was straight to the kitchen to cook up some eggs with onions, broccoli, mushrooms and brown rice, all topped with some asian dressing.

And the of course some cuddles

A Meal of Oats

After an emotional Tuesday, Wednesday was much better. I went to PT and worked out with my trainer. It’s not an easy workout even though many of the movements are quite simple and small. And after yesterday’s reflection about my current limitations, it felt great to  move around and witness my progress completing certain exercises. While there is still a long way to go, I am miles away from where I was a few weeks ago and I just have to focus on the small accomplishments that will eventually add up to a major transformation.

To start the day on a rainy and cool Wednesday morning I heated up some oats with extra protein. I poured a bag of instant oatmeal into a saucepan with enough water to cover most of the oats. I let that heat up on low heat and then added in some egg whites. After all of it was fully cooked I tossed it in a to go container and topped it with some pecan crumbles. It was still warm when I got to work and was ready to eat.

WIAW – Forever Changed

Life will continue to surprise you all of the time. New opportunities will come your way, friends will come and go and accidents will happen. My accident happened on the last day of June and now my life is forever changed.

My recovery has been going very well and the check-in with my surgeon yesterday left me feeling pretty good physically. I can increase the intensity of the workouts I am able to do and I can continue walking around like normal, but I still have to refrain from running for a year and pilates is also out of the question until the end of next summer. I knew this information going into the doctor’s appointment, but I guess emotionally I hadn’t fully dealt with this major change in my life.

I will have a full recovery and I will run again, but it will take time and there will most likely be complications later in life. Yesterday all of this really sunk in, and while I am thrilled with how far I have come, I am not prepared to accept that I will not wake up tomorrow and be able to run without a care.

Running has been a major part of my life for a very long time and now I must find new outlets for exercise and adjust to my current limitations. Life is forever presenting new challenges to conquer and yesterday I was not ready emotionally to accept the truths of my new reality. After some tears and an evening embracing the loss of what I used to know, I reminded myself of all of the things I am able to still do and the goal of running hovering on the horizon.

It will be a long journey, but that’s what keeps life interesting and I will forever be stronger for it.

Now on to the food of the day:

Spooky Snacks and Healthy Halloween Treats
It was an early day at work so to warm me up for the day I had a hot bowl of oatmeal

Between that bowl and dinner I had plenty of snacks throughout the day and when I finally made it home after work, the doctor (including the emotional breakdown) and the pool, I made a faux fried rice:

Onions, chicken sausage, rice and egg whites with some teriyaki sauce.

And that was my very busy, emotionally packed WIAW.

WIAW – Scrambled

 

Scrambled is how my mind felt by the end of Tuesday. It was an incredibly long day full of back to back to back meetings that ended with an overwhelming desire to go home and collapse, but a strong will sent me to the pool.

The morning started with some banana and sun butter as fuel.

By the time there was a break in my work day I scarfed down my matzoh ball soup from the other night so no picture.

After some laps in the pool I made this tofu scramble to end the day on an appropriate note:

I sautéed some onions with some kale, crumbled in some tofu and mixed it all together with some edamame hummus. Scrambled goodness.
