Time for some fun food!

Healthy guacamole, woman peas! Yup, I made it with peas!IMG_1604I used 3 very ripe avocados and half a bag of frozen peas (that I defrosted first). I hand blended the avocados and peas together, but I like my guac chunky so I didn’t blend it until it was smooth. Then I added in chopped red pepper, onion and cilantro. I mixed in some garlic powder and lime and then it was munchin’ time.

Waking up with the spring sun has inspired many a morning full of smoothies including, a refreshing strawberry banana smoothie.IMG_1609One banana blended with a handful of frozen strawberries, plus some almond milk and chia seeds. That simple. Blend together and finish with a straw – the only way to drink a smoothie in the morning :)

Chicken dinner – easy but delicious and satisfying after a long day at work followed by a workout. I tossed some chicken breasts in the oven with Trader Joe’s Soyaki sauce and sautéed some broccoli and brussel sprouts with garlic and oregano. I added all of those components to a large bowl with rice and topped it all off with some dipping ketchup. Quite a filling meal.  IMG_1618And that’s it for what I ate Wednesday!

Taking it Back

On June 30, 2012 my life changed forever. In a freak, let’s prove the existence of physics running accident, I broke my left hip. After major surgery and months of recovery I am back in tip top shape. Other than a higher risk of arthritis and some weaker leg muscles that will slowly even out, I feel great.

Recently, I was given the ok from my doctors to return to impact sports, including running! I’ve known for over a week that it’s perfectly fine to move my body in that way, but after such a traumatic experience with my favorite activity I had to mull over my newly found freedom. Since the accident I haven’t even hopped on my left leg and now I am fully functioning and able to feel the pavement fly by under my feet.

But it’s not that simple. I had a major trauma to my left hip and increased impact means higher chances of arthritis, and no one wants that. So, I will have to strike a fine balance between my love of running and my desire to continue living pain free. This is the challenge that lies before me, but yesterday was simply the day I got to take back running!

In addition to my run, I did something else that I haven’t done in a while: Kayaking!

Just over the bridge in Marin I took advantage of the Cali sun and paddeled out on the water, enjoying the view and a few sea lion friends.

And after all of this activity I  was ready for an easy dinner -

I lightly microwaved a sweet potato, then cut medallions to line the bottom of a glass dish. I also sauteed some brussel sprouts and broccoli and mixed it together with two eggs and some egg whites and of course spices: garlic powder, onion powder, pepper, oregano. I poured this mixture into the dish and topped it with sesame seeds. I baked it at 350 degrees for about 20 minutes.

I served this dish with arrugala and avocado and KETCHUP! Yum!

WIAW – eating go-to meals

I love going to the grocery store and shopping for fresh ingredients to use in new recipes. Even better is going to the farmer’s market on Sunday morning and buying right-off-the-farm veggies to cook up during the week.

Well this weekend I did have a chance to fill my reusable bags with beautifully fresh foods, however I did not have time to imagine creative recipes and had to default to some old favorites and easy go-to meals.

For lunch I enjoyed simple ground turkey and tomato sauce over zucchini shredded into spaghetti:

And even though the sun had set, for dinner I was craving some eggs, so I enjoyed another easy meal of eggs, avocado, salsa and almond cheese:

I am determined to come up with some new and exciting meals by the end of the week and seeing these sorry pictures of boring repeats inspires me even more to get creative in the kitchen.

WIAW – Quick and Easy

I like to cook. I really do. But that doesn’t mean that I slave over a hot stove for hours with countertops of ingredients. I like to use as few ingredients as possible because the shorter the list the faster I get to eat. The simpler recipes also give me less of a chance to make a major gourmet faux pas!

For instance, I baked some simple chicken in the oven with some spices and then cooked up some bokchoy with lemon, green onions and garlic. I added some brown rice to balance out the meal and topped it with some balsamic vinegar and I was all set to eat in about half an hour. IMG_1305For dinner I was really hungry and had no intention of getting creative in the kitchen or trying to heat up something fabulous, so instead I made sure I got some protein. I cooked up some egg whites and ate them with peanut butter on rice cakes and it was delicious and satisfying! A bit odd for dinner, but I am all for eggs at any time of day and I have a long loving relationship with peanut butter, so I’m happy whenever I can work it into a meal :) IMG_1306What are some of your go to easy-peasy meals?

WIAW – On a very long day

It’s rare that my office has very long meetings, but yesterday was one of those days where I  entered the building at 7am and did not leave until 5:30pm. We had an all day meeting with a handful of 10 minute breaks to stretch our legs and snarf down a snack. I was so tired and hungry by the end of the day that I almost didn’t make it to the pool, but I had to move my body after sitting in a chair for over 10 hours!

Pizza was ordered in for lunch, but I was smart enough to bring some leftovers from the other night so I had something to eat (I didn’t feel like picking off all of the cheese and eating soggy bread).

It was painful to drive past my apartment after work and head on to the pool, but once I jumped in it felt so good to stretch my arms and legs and glide through the water. Of course the whole time I was trying to figure out what to eat for dinner and I came up with this combination:

Egg whites, broccoli, smoked salmon and avocado with some ketchup.

I survived the day and managed to stay awake through dinner, but then I crashed. Thank goodness today will not be as long. However, I will probably still need to convince myself that heading to the gym, no matter how hard of a work day, will always make my body feel better.

Spin Therapy

I parked the car, grabbed my gym bag and proceeded to the tag scan. I reached for a towel and did a double take. There was a stack of spin class passes for the 5:15pm class and I couldn’t look away. I have been cleared to do spin classes by my doctor and up until this point I have walked right past the classes to do my own workout on the stationary bike. But not today. Today was the day I was going to spend 45 minutes listening to a woman on a bike yell at me to climb an imaginary hill. My hand reached for the pass before my brain could talk me out of it and I proceeded to studio 2 to pick out a bike.

It was not the hardest I have ever worked in a spin class, but it might have been one of my favorites purely because my mind went completely blank and all I was thinking about was my muscles pulling the bike pedals. Today was an incredibly rough day. From setting off my office building alarm because I was the first one there, to reliving traumatic moments of my accident, all I wanted was to forget the day. Spinning in that room melted away those heavy emotions of the day and left me feeling free (well as free as I one can be on a stationary bike in a small little room in a gym).

When the class was over I was convinced it was not the same day. I felt great! I was even inspired to create an incredibly delicious meal for myself:

Chicken and broccolini cooked in balsamic vinegar and lemon with some brown rice.

It’s good to know that a free class at the gym can really turn things around. I am inspired for tomorrow and can’t wait till my next 45 minutes of spinning.

What do you do when you have “one of those days”?

Peas Please

My go to soup when I have cold is of course matzoh ball soup, but I was in the mood to create something from scratch instead of using a boxed mix.

I found a new recipe that is simple but will sweep you off your feet.

Add some onion, celery and green onions to a pot and stir with a dash of olive oil for a few minutes.

Add 3 cups of broth (veggie or chicken) and 4 cups of peas.

Bring to a boil and then simmer for 10 minutes.

Then blend in a blender, or with a hand blender, to your desired consistency.

I topped mine with some pepper, garlic and chives.

Perfect served hot or cold!

Starting the year off right

I celebrated with a night of drinks and dancing :)

It was a perfect way to spend the evening, moving on the dance floor with both my good hip and my no-longer-broken one.

The first day of 2013 was spent resting my tired legs, enjoying the fresh January San Francisco air, relishing in good cuddles

and enjoying a new twist on my old favorite, carrot soup.

Dave added ginger to my soup recipe and created a new vibrant and heart warming masterpiece.
