Easy as foil, fold, finish!
– Aluminum foil
– Boneless chicken breasts (one per foil pack/serving)
– 1 onion
– package of cherry tomatoes
– 1 package of mushrooms
– Butternut squash
– 1 head of broccoli
– Dijon mustard
Preheat oven to 450 degrees
Cut up all vegetables into bite sized pieces. Mix all vegetables in a large bowl with 5 tablespoons of dijon mustard and 2 tablespoons of oregano. Make sure the vegetables are evenly covered.
Spread out a large piece of foil, place one chicken breast in the middle of the foil and then layer mixed vegetables over the top.
Grab the long sides of the foil and bring them together, sealing those two sides together. Then fold in the two short sides of the foil pack so all 4 sides of the foil are sealed.
Place foil packs in the over for 30-45 minutes (depending on the size of the chicken breasts)
Pour contents onto a plate and throw away the foil – clean up DONE!
