I used to be a defrost veggies, cold-cut turkey, put it all in a salad girl, and while on the occasional lazy day I will revert to this comfort zone, I can now happily say I experiment with a diverse range of cooking devices and ingredients on a daily basis.
Due to my digestive issues I stay away from dairy (cottage cheese is A OK for some reason), hence the strong love of almond milk, and anything fried. Also, as a habit from growing up I in a household with no red meat, I only eat poultry and fish. So below you will find dairy free, light-oil, non red-meat, mostly gluten-free recipes – eat up!
