Tuna Salad

I love me some good tuna salad but I can do without the mayonnaise or the occasional hardboiled egg. This recipe is quick, easy and healthy:

1 can of tuna in water

1/3 cup of minced yellow onion

1/2 cup of plain cottage cheese

2 tablespoons of dijon mustard

Chopped celery (optional)

pepper to taste

I promise you those are all the ingredients you need. Simply mix it all together and enjoy over a bed of arugula or on some bread with some melted cheese (fake cheese in my case – but still delicious) 🙂
