Who doesn’t love Trader Joe’s? One of my favorite specialty items from there is the pre-made egg white salad. It’s great to grab for breakfast when you’re in a rush and I love mixing it into my salads. Yesterday I made a salad with these egg whites, cherry tomatoes and chopped up pickles 🙂
I guess I didn’t get enough of my Trader Joe’s fix because I found myself there after work, picking up some staples:
– Peanut Butter Puffins (not one but two boxes. You never know if there will be a freak snow storm in San Francisco – you should always be prepared)
– Sliced turkey
– Brussel sprouts
– Sweet and sour mustard
– Eggs
– And some pineapple for last night’s dinner…
Pineapple Chicken
Sauté garlic, one onion, brussel sprouts, butternut squash (I like to microwave it a bit first and then add it to the pan to make sure it is fully cooked by the time all the other ingredients are done cooking), some green onions, fresh pineapple chunks, a little bit of chicken stock and chicken. You can top it with any sauce you like but I prefer simple soy sauce.
