The clouds rolled in just in time to accompany some unfortunate news in my work world but I am taking advantage of the situation and making it work for me – more on this in the next couple of days.
Yesterday’s rainy/cloudy day in the bay inspired me to make a tropical themed dinner to brighten up the evening.
Pukana la (sunshine) Quinoa
1 cup of quinoa
2 cups of chicken or veggie broth
1 red pepper
- Prepare quinoa with broth and set aside
- Sauté the garlic and onion in a little bit of pineapple juice, ginger and soy sauce
- Add broccoli and pepper
- Right before the veggies are fully cooked add chopped up pieces of pineapple and the cooked quinoa
- Serve on top of a bead of spinach and top with sliced almonds and sesame seeds
