Working on a Saturday

Somehow I managed to fall asleep at 10:30 pm est (7:30pm pst) and woke up with time to head to the gym for a quick 3 mile run and some abs before getting ready for our meeting on Saturday.

Then I set up shop in the back of our conference room to distract myself with the computer as my coworker led a training session for our volunteers.

I promise you I did do some work actually pertaining to my job yesterday but I also found some great links on the world wide web for your reading/viewing pleasure:

– My local farmer’s market sent me this recipe that I have to try – let me know if you try it too!

Recipe – Roasted Rosemary Citrus

Ingredients
Citrus: Feel free to substitute your favorite!
  1/2 grapefruit (sliced into sections)
1/2 cara cara orange (sliced into sections)
  1/2 navel (sliced into sections)
1 meyer lemon (sliced into sections)
2 tablespoons rosemary
olive oil
salt (optional)
Directions
Preheat oven to 400F.
Arrange sliced citrus on a cookie sheet lined with parchment paper. Lighly drizzle fruit with olive oil and sprinkle with rosemary and lightly salt if desired.
Place cookie sheet in oven for 20 minutes, or until citrus peels begin to soften and edges of fruit begin to blacken.
Remove from oven. Serve warm.
Traveling across the country always messes with my eating schedule so instead of trying to eat at east coast meal times I figured it would just be better to snack all day on what the hotel provided us with – most likely a mistake.
Here’s to traveling on a plane home this morning 🙂
