Walking is becoming more natural again as the pain continues to subside. I’m dying to run but I think that is still a few days off so for now I will be content with sweating via the bike.
For someone reason Oscar night seemed like the perfect night to try a new recipe. As I watched the beautiful celebrities grace the red carpet with their gowns, I was wearing sweats and chopping up veggies.
While I did not win a pretty statue for my work, I do believe a got a two thumbs up.
Marinate pressed tofu in a 3/4 of chicken stock, 1/4 cup of water, 1/4 of soy sauce, 1 tablespoon of brown sugar and chopped up scallions (1-2 hours).
Lay pieces of marinated tofu on a baking sheet and sprinkle with sesame seeds. Bake in a 400 degree oven for 30-45 minutes – flipping tofu half way through.
Saute onions, garlic, broccoli, cauliflower, scallions, kale. Add spices – hot pepper flakes, powdered ginger and powdered garlic. Add 1 cup of cooked brown rice, the fully baked tofu (with the remaining marinade) and whisked eggs (1 egg, 2 egg whites). Cook eggs all the way through and serve hot!
