I almost forgot what day it was, but thankfully I snabbed a pic of my pancake to post for today’s third installment of What I Ate Wednesday.
Tuesday’s pancake included 1/4 cup of egg whites, 2 scoops of PB2 and half of a banana. This was a bit of an experiment and it actually came out quite fluffy (I made sure to blend the batter for a little bit longer than usual), but not as peanut buttery as I would have liked – good thing there are plenty more mornings to perfect this 😉
Lunch was leftovers from dinner: quinoa (cooked with chicken broth, garlic and thyme), sweet potatoes, asparagus, avocado, bell pepper and asian salad dressing.
Besides these two meals there was definitely a lot of snacking going on – hummus and carrots, rice cakes, cereal later for dinner and handfuls of these bad boys:
I am not proud of all of my snacking and lack of green in my meals yesterday but I know I can do better today.
