Workout in the Park

Saturday’s are days for long runs or even the opposite, a lazy elliptical hour, but yesterday I switched up my exercise with Self Magazine’s Workout in the Park.

First I made an easy, protein packed breakfast in the microwave:

1/2 cup of egg whites, scoop of vanilla protein powder, 1 mashed banana, cinnamon

Microwave for 2 minutes – top with your favorite topping

After this breakfast I was ready to take on any exercise challenge.

When I arrived at the event there were lots and lots of women eager to get sweaty

I wasn’t sure what to expect but I was so pleased with the set up. There was a main stage with cardio workouts and then smaller breakout sessions, including yoga and pilates sessions.

Of course there were also plenty of free goodies and it was a great chance to meet some friendly people all bonding over sweating and the burning muscles in our legs.

I left with shaking legs and a smile on my sweaty face 🙂

Before heading out to celebrate Cinco de Mayo I baked some tofu and threw together a salad.

I marinated some tofu (after pressing it between two plates to get as much water out as possible) in a pre-made teriyake sauce and then baked them in the oven at 375 degrees until they started to brown.
