WIAW – I Baked

I finally bought myself some ground flax seed and decided to make Tina‘s no oats oatmeal.

It tastes just like oatmeal!! It was filling, a great texture, really easy to make and a wonderful source of fiber.

As a mid-morning snack I finished off the remains of a Banana Nut Cheerio box

and lunch was a typical salad with turkey and some perfectly ripe avocado.

Followed by some edamame

Instead of a involving myself in an elaborate chopping, stirring and cooking process, I heated up a pre-cooked chicken sausage with some broccoli, greens and tomato sauce.

After munching on another handful of cereal after dinner I had an urge to bake. A while ago I wrote down that I wanted to make Chocolate Covered Katie‘s Peanut Butter Sandwich Bread, so when the oven beckoned I answered.

After mixing the simple ingredients on my spacious counters (*wink *wink)

I popped it in the oven for about half an hour and TaDa!

I BAKED!

    I’ve been loving those no-oats “oats” lately too! It’s a fun change of pace!
