I started the day off with some California avocados and filling cottage cheese on rice cakesThe day progressed with the traditional snacks of steamed carrots and a to go cup of cottage cheese. Dave made delicious chicken for dinner the night before so I made a salad with the leftovers (this picture does not do the flavor justice).I almost made it through the day simply sticking to the snacks I brought to the office but no, I could not resist the cookies in the kitchen. Sometimes it’s frustrating to eat so well all day and then sabotage yourself. But instead of being bummed out by my poor snack choice that seemed to follow me around all afternoon, I used it as fuel for my 6 mile run in the evening.
When I got home from my successful run I created this concoction that I was dreaming about as I jogged. Cooked spinach, cottage cheese, tomato sauce, garlic powder, pepper mixed it all together and popped it in the microwave – quick and so good!It’s hard to resist the temptation of sweets, but I don’t let it ruin my day. Today is another day of eats so I will simply try again to stick to my snacks. I Hope you all had a happy day of eats 🙂
