What do you do when you are antsy and stuck in the house because you can’t leave without a chaperone?
You make cookies!
I literally just threw together what I thought might work so here are the approximate values to make these cake like cookies:
1 egg, 1/4 sugar, 1/4 cup of whole wheat flower, 1/2 cup of sunbutter, splash of vanilla, 3 tablespoons of applesauce.
I mixed it all together and let it set for 10 minutes in the fridge.
Then popped ’em in the oven for 10 minutes at 350.
They were very light and cake-like but quite yummy. Next time I will use more nut butter – I was just using up what was left in a jar.
Once I raided the kitchen to make these bad boys I went for a walk. Well a walk for me means non-stop crutching, which is a great workout. Dave and I go for a walk around our neighborhood and I crutch the whole way. It’s exhausting, but makes me feel like I got a cardio workout in for the day – requiring a big glass of water to refuel.
In between these activities I watched all sorts of Olympic events – biking, handball, basketball, volleyball, swimming, gymnastics…all of it is so exciting! I’m off to watch some more!

Those cookies look very lonesome. Where are the chocolate chips? You are in San Fran. I thought the streets were lined with the glorious taste of Ghiradelli Semi Sweet Chocolate Chips?
Haha they do look lonely. We were out of Choco chips but next time I will make sure these cookies have some company.
