Scrambled is how my mind felt by the end of Tuesday. It was an incredibly long day full of back to back to back meetings that ended with an overwhelming desire to go home and collapse, but a strong will sent me to the pool.
The morning started with some banana and sun butter as fuel.
By the time there was a break in my work day I scarfed down my matzoh ball soup from the other night so no picture.
After some laps in the pool I made this tofu scramble to end the day on an appropriate note:
I sautéed some onions with some kale, crumbled in some tofu and mixed it all together with some edamame hummus. Scrambled goodness.
