Stumped for dinner ideas this week?
If you like simple and healthy meals give these two a whirl:
Spicy Teriyaki Salmon
I simply grilled the fresh salmon on a grill pan and drizzled spicy teriyaki marinade (I recommend the Trader Joe’s variety) over it as it cooked.
At the same time, I sautéed some kale with sweet onions, adding spices and garlic to taste.
To assemble, I placed the salmon and kale on a bed of brown rice and topped the dish with some avocado and sesame seeds.
I also added some spicy mayo as a dipping option 😉

Cauliflower Rice Bowl
loosely based on Vegan Richa’s Rice Bowl
If you Google cauliflower rice you will find that there are plenty of ways to prepare it. I chose to sauté some finely chopped onions in a pan and then grate the raw cauliflower into the pan. I added some turmeric, hence the yellow color, and a bit of olive oil and cooked all of this for only a few minutes.
With the cauliflower rice as the base, I added some white beans, avocado, baked sweet potato, kale and some left over cooked freekeh (I promise this is a real word. Learn more about this super-grain here).
I put my own twist on the hummus, blending white beans with tahini and parsley.
The bowl looked more presentable before the hungry doctor-husband got home and dug in before I could grab a pic. But I promise you can arrange your ingredients in a more blog-worthy manner for your own dining pleasure.
