WIAW #3 – Full of Veggies

I don’t normally find myself eating a parfait because they are usually made with yogurt (which my stomach does not like), but yesterday morning I made myself a delicious, cottage cheese parfait:

Plain cottage cheese

Heaping scoop of PB2

Half of a banana

Sprinkling of banana nut cheerios

Lunch involved plenty of veggies: Lettuce greens with sliced turkey, steamed broccoli, cauliflower and carrots (cooked from the night before) with a dash of sunflower seeds for crunch. We also had some mediterranean food brought into the office so I of course grabbed 2 dolmas (stuffed grape leaves) to round out the meal – so good!

It was such a beautiful day that I couldn’t let myself take the bus home. So I walked home, taking a detour to head to Trader Joe’s, and then went to my pilates class. While I was working my core and trying to keep my abs sucked in my mind kept wandering to thoughts of dinner…

Because I knew it was going to be delicious!

Curried Quinoa Patties

1 cup cooked quinoa

1 large sweet potato

Curry powder

Garlic powder

Pinch of turmeric

Pinch of cinnamon

Mash up sweet potatoes and combine with cooked quinoa and spices until it becomes one consistency. Refrigerate for at least twenty minutes. Then form patties and cook in a 400 degree oven for half an hour. Serve with veggies for a balanced dinner.
