Happy Birthday!
No not to me …. but to my wonderful boyfriend Dave!
Yesterday he turned the big 25 and we celebrated in style.
First I had to make it through the workday…
50 minutes on the elliptical, showered, made lunch and breakfast, out the door before 7:30 am – I was on a roll yesterday morning.
Breakfast might be a new favorite:
Whipped Protein Oats
Cook 1/4 cup of old fashioned oats with 1/2 cup of almond milk. Once the oats are just about done cooking add 1/4 cup of egg whites, 1/2 of a banana, cinnamon and vanilla. Cook everything together for another minute and then blend with a hand blender. I transferred mine to an old cookie butter jar, which worked perfectly to bring to work. Delicious.
My mid morning snack was a bag of slightly steamed carrots and left over hummus (clearly I was too hungry to wait for a picture).
And lunch was a cottage cheese salad and later some rice cakes and hummus (unpictured).
Then Dave’s parents took us out to the restaurant COI for a 12 course meal – It was incredible.
Simple, local ingredients, treated with beauty and poise. Every forkful was packed with flavor, texture and surprise for the entire four hours we were at the table. This is certainly one meal I will never forget.
