Most of my meals yesterday were repeats of typical weekday breakfasts, lunches and snacks.
Eggs and Oats, rice cakes, veggies, cottage cheese salad, sweet potato pop chips (not pictured)
But on my way home on the bus I remembered about a bag of Shiratake Noodles I had in the back of the fridge and decided to make something new:
After drying the noodles for some time – rinsing, quick minute in the microwave and then resting on paper towels for a an hour or two – I add veggies and my “cheese sauce” to the noodles and viola.
I ended up adding a bit of tomato sauce for extra depth of flavor and was pleased.
What really made my night was getting a surprise gift in the mail from my sister π

What’s the last thing you got in the mail?
I’ve never tried Shiritake noodles, but I’ve heard they can be unpleasant. Is your elaborate cooking method a way to make them palatable?
Haha, yes. The drier the noodles the better the sauce will stick to them π
