After an emotional Tuesday, Wednesday was much better. I went to PT and worked out with my trainer. It’s not an easy workout even though many of the movements are quite simple and small. And after yesterday’s reflection about my current limitations, it felt great to move around and witness my progress completing certain exercises. While there is still a long way to go, I am miles away from where I was a few weeks ago and I just have to focus on the small accomplishments that will eventually add up to a major transformation.
To start the day on a rainy and cool Wednesday morning I heated up some oats with extra protein. I poured a bag of instant oatmeal into a saucepan with enough water to cover most of the oats. I let that heat up on low heat and then added in some egg whites. After all of it was fully cooked I tossed it in a to go container and topped it with some pecan crumbles. It was still warm when I got to work and was ready to eat.
