For those of you that follow my blog you already know that I do not eat dairy products due to a digestive issue. Don’t get me wrong I love dairy. I used to be the queen of cheese and ice cream, but in high school I started to have some stomach issues – frequent trips to the bathroom, pain, discomfort – and I was diagnosed with Colitis. Since pin pointing the issue I have avoided dairy products because they are a trigger food and for the most part I have done just fine without this creamy delight in my life.
However, sometimes you just want a bowl of fro-yo or plate of cheese and crackers. So last night I decided to treat myself to a creamy dinner that would not hurt my tummy. For some reason cottage cheese does not bother me and I normally have at least one serving of it a day. Last night I decided to eat this serving in a slightly different way:
I made a creamy salad dressing!
And it was delicious!
I blended together a cup of cottage cheese, 1/4 cup of hot water, parsly, garlic powder and pepper. Really, that’s it! Once blended I put it in a jar in the fridge to thicken and waited for the flavors to intensify.
I was so pleasantly surprised with the outcome – it has a great fresh flavor and it’s a welcome change up from the day to day balsamic vinaigrette.
