The weekend is winding down and the kitchen is heating up. This simple stir-fry has been a go-to-meal since college. No two are ever exactly the same, but they are all delicious and soul-warming.
Sauté some garlic and onions with a little bit of oil. Or, if you prefer to avoid oil you can use some water and a little apple cider vinegar. Then toss in diced vegetables of your choosing: broccoli, squash, baby corn, peppers, mushrooms…
Depending on what types of flavors you are interested in you can add ginger, cilantro, jalepeno, turmeric, cilantro, lime, black pepper and salt to your liking.
This stir-fry was serviced over some brown basmati rice with the addition of some chopped chicken for protein.
Now it’s time to sit back in front of the TV and relax. See you on Monday!
